Baked Beets & Moongdal Vadas

If you are craving for some vadas, its better to try this guilt free,quick and definitely healthy vadas prepared with grated beets and coarsely grounded moongdal batter, this vadas goes for baked version and its an oil less snacks to enjoy without any hesitation..Serve this vadas hot with some spicy coconut chutney for your snacks or either as side dish along with any sort of rice dishes, you will definitely enjoy this mildly sweet and spicy vadas...A wonderful vadas to enjoy anytime of the day and we enjoyed having them with some ketchup for our snacks..We just loved it..


1cup Yellow Moongdal (soaked for 2hours)
1/4cup Beetroot (finely grated)
1no Onion (chopped)
2nos Green chillies (chopped)
1tsp Ginger (grated)
1/4tsp Fennel seeds (crushed)
5nos Curry leaves
Few Coriander leaves (chopped)
Salt
Oil for greasing

Drain the excess of the water from the moongdal and  grind the dal coarsely without adding water, if its too hard to grind just springle few drops of water..now add the chopped onions,grated beetroots, chopped green chillies, grated ginger pieces, chopped curry leaves, coriander leaves, crushed fennel seeds with enough salt to the grounded batter and mix everything well..Preheat the oven to 350F...

Grease a baking sheet with oil and arrange over a baking tray..make small balls from the vada batter and flatten them as small vadas and place one by one over the baking sheet..Bake for 25-30 minutes by turning the vadas once in between until they turns brown...
